Here is a simple recipe for hummus using extra virgin olive oil:
INGREDIENTS
- 1 can (15 oz) of chickpeas, drained and rinsed
- 3 tablespoons of tahini
- 3 tablespoons of freshly squeezed lemon juice
- 2 cloves of garlic, minced
- 1/4 teaspoon of cumin
- Salt, to taste
- 3-4 tablespoons of extra virgin olive oil
- Water, as needed
- Paprika and extra virgin olive oil, for garnish
INSTRUCTIONS
- In a food processor, combine the chickpeas, tahini, lemon juice, garlic, cumin, and salt.
- Start processing the ingredients and gradually add in the extra virgin olive oil while the food processor is running.
- If the mixture is too thick, add water, 1 tablespoon at a time, until the desired consistency is achieved.
- Continue processing until the hummus is smooth and creamy, about 2-3 minutes.
- Transfer the hummus to a serving bowl and garnish with a sprinkle of paprika and a drizzle of extra virgin olive oil.
- Serve with fresh vegetables, crackers, or pita bread.
